



Kermes and cochineal are both insect-derived red dyes belonging to the anthraquinone family, used since antiquity to produce some of the most prized red lake pigments in European painting.
Kermes (Kermes vermilio) is a scale insect that lives on the kermes oak (Quercus coccifera) native to the Mediterranean basin and the Near East. Its colorant, kermesic acid (C₁₆H₁₀O₈), produces a warm, slightly orange-toned crimson.
Cochineal (Dactylopius coccus) is a New World scale insect parasitic on prickly pear cactus (Opuntia), whose colorant, carminic acid (C₂₂H₂₀O₁₃), yields a cooler, more violet-toned crimson of far greater intensity.
Both dyes are extracted from the dried bodies of female insects and precipitated onto an aluminum hydroxide substrate (from potash alum) to create lake pigments suitable for painting.
The word carmine traces the deep entanglement of these dyes with language and culture. It derives from Medieval Latin carminium, from Persian qirmiz (“crimson”), ultimately from Middle Persian carmir (“red”), likely cognate with Sanskrit krimiga (“insect-produced”), from krmi (“worm”). The same root gave Italian cremisi and English crimson.
Kermes was so valuable in the ancient and medieval world that it was known as the “king’s red.” The connection between the insect dye and its name survives in the Italian liqueur alchermes, from Arabic al-qirmiz (“the kermes”), a spiced spirit originally colored with kermes and later with cochineal, famously prepared at the Officina di Santa Maria Novella in Florence from 1743, where it was promoted as an elixir of long life and became known as the liquore de’ Medici after Caterina de’ Medici introduced it to France.
Kermes was the principal source of red lake in European painting and textile dyeing from antiquity through the Middle Ages. Recent micro-Raman analysis of paint cross-sections has confirmed kermes-based lakes in works by Leonardo da Vinci (The Last Supper, 1494-1498) and Masolino da Panicale (Beheading of St. John the Baptist, 1435), correcting earlier identifications that had attributed the red lake in Leonardo’s painting to madder.
The Spanish conquest of the Aztec Empire in the early 16th century transformed the European dye trade virtually overnight. Cortez’s soldiers recognized cochineal as resembling European kermes but far more potent: cochineal insects contain 14 to 26 percent carminic acid by dry weight, yielding 10 to 12 times more colorant than kermes. Cochineal quickly became New Spain’s second most valuable export after silver, and by the 1520s it had begun to displace kermes across Europe. Micro-Raman studies of Venetian paintings from the later 16th century, including works by Tintoretto (The Finding of the Body of Saint Mark, 1562) and Veronese (Supper in the House of Simon), confirm the use of cochineal-based carmine lakes, reflecting Venice’s position at the center of commercial exchanges with the New World.
Both cochineal and kermes lakes remain in use today, though in vastly different contexts. Cochineal extract (E120, Natural Red 4) is widely used as a food, cosmetic, and pharmaceutical colorant, and remains the preferred natural red dye where synthetic alternatives are undesirable. As an artists’ pigment, cochineal lake is still commercially available and valued for transparent red glazes, though it has been largely superseded by more lightfast synthetic organic reds such as quinacridone. Kermes, by contrast, is now extremely rare and produced only in small quantities for historical reconstruction and specialist textile work.
